Tofu wraps with peanut butter sauce

Serving Size: 4 people

- 300 g of tofu or basilic tofu
- 200 g chopped red onion or red cabbage
- 1 red bell pepper
- 4 grated carrots
- Lemon juice
- 4 tortillas
- A hand of mint or parsley

For the peanut butter sauce:
- 3 tablespoons of peanut butter
- 1 tablespoon of apple cider vinegar
- Ground pepper

- Preheat the oven to 200ºC;
- For the sauce, mix all the ingredients and set aside;
- Cut the tofu into strips of about 2 centimeters and distribute them in a tray. Place the sauce on top and with a spatula turn all the tofu pieces.
- Place the tofu in the oven for 20 minutes until golden brown and crispy around the edges.
- While the tofu is cooking, chop the onions (or cabbage) and bell pepper, grate the carrots, place in a bowl and drizzle with the lemon juice. Add a pinch of salt and stir everything together.
- Three minutes before removing the tofu, place the tortillas in the oven to toast.
- Fold the wraps and pour the remaining sauce on top. Add mint or other herbs to taste on top and you're done!
