Pumpkin and Chocolate Muffins
For 6 muffins
Ingredients:
- 2 Eggs
- 200 g pumpkin puree
- 120 g oat flour
- 2 tablespoons of agave syrup
- 1 dessert spoon of baking powder
- 1 teaspoon of vanilla essence
- Cinnamon powder to taste
- 20 g chocolate 85% cocoa
Preparation:
- In a bowl place the eggs, pumpkin puree, agave syrup and vanilla essence. Mix it all very well;
- Add the oat flour, the cinnamon powder and the yeast, and mix again until you obtain a homogeneous dough;
- Place the batter halfway into the silicone mould, and add a piece of chocolate in the middle of each one. Cover each muffin with the remaining batter;
- Bake in a preheated oven at 180ºC for 30 minutes. Remove, let cool a little and serve.
