Pear with coffee meringue

For the pears:
For the chocolate syrup:
For the "earth" :
  • 200 g chocolate biscuits
For the coffee meringue:
  1. Pear: Combine, in a saucepan, the apple juice and spices. Peel the pears, without removing the stems. Place them in the pan and bring to a boil. When it boils, reduce to medium heat and cook for 15 minutes, or until the pears have softened.

  2. Meringue: add the aquafaba, apple cider vinegar and xanthan gum to the bowl of the blender. Turn on the mixer on medium speed and beat until the aquafaba forms soft peaks. Reduce the speed and add the coconut sugar and instant coffee, spoon by spoon. When these ingredients are incorporated, increase the speed and beat for ten minutes. Place in the refrigerator until serving time.

  3. Ground: crush the biscuits until they become ground.

  4. Platting: distribute three teaspoons of meringue in three different parts of the dish. Place a cooked pear in the centre. Cover half the pear with the hot chocolate syrup, and finish with a path of "earth" diagonally across the plate.
