Peach crumble with oats and cherries
For the Crumble:
120 g of flour
60 g of oats
120 g of unsalted butter, diced
60 g of brown sugar
1 teaspoon of cinnamon powder
30 g of sliced almonds
Salt to taste
3 basil leaves
For the Apples:
4 peaches cut into large pieces
1 tablespoon of brown sugar
1 tablespoon of Cristal Red Berry Balsamic Vinegar
1 pinch of salt
4 scoops of vanilla ice cream
10 cherries cut in 1/2 and stoned
Preparation:
For the Crumble:
1. In a bowl mix all the ingredients together with your hands to a thick, loose "sandy" consistency.
2. Place on a baking tray with baking paper and place in the oven at 180°C for 20-25min until well toasted.
3. Stir 2 to 3 times during the baking process.
4. Remove and set aside.
For the Peaches:
1. Mix well in a bowl to macerate the peaches, for about 30 mins.
2. Sauté the peaches in a very hot frying pan, for about 1 to 2 min, letting them gain some colour. Add the cherries and sauté for another 2 to 3 min.
3. Serve with the crumble, topped with the vanilla ice cream and the liquid from the macerated peaches.
