Lemon & blueberry muffins
- 3 medium apples
- 2 eggs
- 2 tbsp (25g) almond butter
- 2 tablespoons (20g) agave jelly
- 200ml almond vegetable drink, sugar free
- 240g oat flour
- 80g blueberries
- ½ teaspoon of yeast
- 1 dessert tea spoon of cinnamon powder
- ½ teaspoon of salt
- 2 teaspoons of lemon zest
1. Place the eggs, agave jelly, vegetable drink, oat flour, apples and cinnamon in a food processor and mix until smooth;
2. Add the yeast and salt, and mix everything very well;
3. Add the lemon zest and blueberries and mix again;
4. Divide the batter between the muffin tins and bake in a preheated oven at 180ºC for 40 minutes;
5. Serve decorated with lemon zest.
