Chickpea Wraps with tuna and tomato sauce
Serving size: 2 portions
Ingredients:
For the wrap:
- 2 eggs
- 3 tablespoons of chickpea flour (25g)
- Pepper to taste
For the filling
- 1 can of tuna
- 3 tablespoons of tomato, ricotta and basil sauce
- 1 tablespoon olive oil
- 1/2 purple onion
- 2 cloves of garlic
- 1 medium grated carrot
- 2 hands of spinach
Preparation:
1. In a non-stick frying pan put the olive oil, the onion, the garlic cloves and
and let it brown;
2. Add the carrot and the spinach and cook for a few minutes;
3. Add the tuna and the tomato sauce, mix everything very well and let it cook a little more;
4. Set the stuffing aside.
5. Place the eggs, flour and pepper in a bowl;
6. 6. Whisk very well until you get a homogeneous mixture;
7. In a preheated non-stick frying pan place the batter and let the crepe
cook on both sides;
8. In one half of the crepe, fill it with the previous preparation, and then fold the crepe to close it;
9. Serve with a salad to taste.
