Gluten-Free Digestive Biscuits

Ingredients:
300 g of oat flour
100 g of coconut oil
100 g of sugar
80 ml of lactose-free milk or plant-based drink
2 teaspoons of yeast
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
Preparation:
- Preheat oven to 160ºC;
- Mix everything together and knead by hand or use a food processor (whichever is more convenient), until the dough is homogeneous;
- Roll the dough between two sheets of parchment paper until it reaches the desired thickness and cut into the shape you want;
- Arrange the cookies on a baking tray on top of baking paper and place in the oven for an hour or two or until the cookies start to turn golden brown;
- Remove from oven and let cool without touching.
