Almond and Coconut Energy Balls

Makes 10-12 balls

Ingredients:
- 120 g Medjool Dates
- 120 g Almonds with skin
- 3 tablespoons of coconut flakes
- Grated Coconut to taste
- Pinch of Himalayan Pink Salt

Preparation:
  1. Start by removing the stone from the dates and soak them in hot water for 10 minutes;
  2. Using a food processor, grind the almonds with the skin;
  3. Add the dates, the coconut flakes and a pinch of salt and grind again until a homogeneous, mouldable paste is formed;
  4. Form small balls with your hands and put aside in the fridge for 20 minutes;
  5. Place the grated coconut in a bowl and rub each small ball with it.
  6. Enjoy or keep your energy balls in the fridge.
