Almond and Coconut Energy Balls
Ingredients:
- 120 g Medjool Dates
- 120 g Almonds with skin
- 3 tablespoons of coconut flakes
- Grated Coconut to taste
- Pinch of Himalayan Pink Salt
Preparation:
- Start by removing the stone from the dates and soak them in hot water for 10 minutes;
- Using a food processor, grind the almonds with the skin;
- Add the dates, the coconut flakes and a pinch of salt and grind again until a homogeneous, mouldable paste is formed;
- Form small balls with your hands and put aside in the fridge for 20 minutes;
- Place the grated coconut in a bowl and rub each small ball with it.
- Enjoy or keep your energy balls in the fridge.
